MAKASSAR,Indonesia May 31 2026 /Postharvest Metabo-Engineering/-Herbal plants have been used forcenturies as natural remedies for maintaining human health. One tropical plantthat has attracted growing scientific attention is Annona muricata,commonly known as soursop. Its leaves are widely believed to contain beneficialcompounds with antioxidant, anti-inflammatory, and potential anticancerproperties. However, before these leaves can be processed into herbal tea,capsules, or medicinal products, they must first go through a drying process.Surprisingly, the way the leaves are dried can greatly affect their quality andhealth benefits. This is why scientists are now developing smarter dryingtechnologies to preserve the natural compounds inside soursop leaves.

Animportant scientific article titled “Development and Comparison of DryingTropical Herbal Strategies for Annona muricata Leaves: Integrating of EffectiveMoisture Diffusivity Using Antioxidant Activity, FTIR Ratios, and ColorAttributes” was published on 30 January 2026 in the journal Trendsin Sciences by DJMP. The study investigated different dryingmethods for soursop leaves and analyzed how each method influenced antioxidantactivity, chemical structure, moisture movement, and color quality. By combiningadvanced technologies such as FTIR spectroscopy and chemometric analysis, theresearchers aimed to identify the most effective drying strategy for preservingthe medicinal value of the leaves.

Dryingmay sound simple, but it is actually a complex scientific process. If herballeaves are dried too slowly, important compounds can degrade because ofprolonged exposure to oxygen and heat. On the other hand, excessive heat canalso damage sensitive phytochemicals. In this study, researchers comparedseveral drying methods, including room-temperature drying, sun drying,convective tray drying, and microwave drying. The results showed that microwavedrying at 380 watts provided the best balance between speed and quality. Theleaves dried in only about four minutes while maintaining strong antioxidantactivity and preserving important chemical compounds.

Theresearchers discovered that microwave drying at high intensity helped protectphenolic compounds, which are responsible for many antioxidant benefits. Incontrast, some medium-power drying methods actually reduced antioxidant qualitybecause the leaves were exposed to heat for a longer time. Interestingly, thestudy also found that color alone could not fully predict the medicinal qualityof the leaves. Some leaves looked greener but contained lower antioxidantactivity, while others experienced slight color changes but preserved morebeneficial compounds. This proves that modern scientific tools are necessary toaccurately evaluate herbal products.

Herbal medicines and plant-based health productsare becoming increasingly popular around the world because many people areseeking more natural healthcare alternatives. By improving drying technologies,scientists can help ensure that herbal products maintain their nutritional andmedicinal quality before reaching consumers. Better processing methods alsosupport safer and more effective herbal products for public health.

Beyondhealth benefits, the study also contributes to sustainable agriculture andlocal economies. Efficient drying systems can reduce processing time, saveenergy, and minimize product waste. Farmers and small herbal industries can usethese technologies to improve product quality and increase market value. Intropical countries where medicinal plants are abundant, innovations like thismay help create new economic opportunities while supporting sustainableproduction practices.

Thefuture of herbal medicine depends not only on discovering powerful plants, butalso on processing them correctly. Through advanced drying science, researchersare proving that technology can help preserve the healing power of nature. Withsmarter processing methods, soursop leaves may become an even more valuablenatural resource for improving human health and building a more sustainablefuture.
