Dr.rer, nat Olly Sanny Hutabarat is a prominent academic in the field of agricultural engineering and food processing, holds a Ph. D in Chemical, Environmental and Bioscience Engineering from Technology University of Vienna, Austria, in 2019, a Master’s degree in Agricultural Engineering from Bogor Agricultural University (IPB) Bogor in 2008, and a Bachelor’s degree in Agricultural Engineering from Sriwijaya University in 2004.
Research Overview:
Dr.rer.nat Olly Sanny Hutabarat has a research focus on topics such as post harvest technology, food processing and agricultural waste valorization. A major drawback of the modern agricultural system is the production of large amounts of organic agricultural waste. Annually 1300 million tons of agricultural waste is generated comprising rejected or inedible plant tissues such as pruning, fruit thinning, shelling or forestall residues, and food processing wastes such as coffee husk, wheat straw and fruit pulp from post-harvest loss or fruit juice production. These wastes are often discarded without any recovery treatment, which then end up accumulating uncontrollably, causing different environmental problems. Organic agricultural waste on the other hand, is a rich source of bioactive compounds, mainly from secondary metabolites which exert a wide range of health benefits such as antioxidant, anti-cancer, anti-inflammatory, cardioprotective, anti-microbial, and anti-allergenic activities. Current research is focused on utilization of coffee cherry and husk skin into valuable products.
