Mission and Aims
Our mission is to reduce food waste by valorizing agricultural byproducts. We achieve this through a multidisciplinary approach encompassing metabolomics, bioanalytics, bioactivity assays, product development, and encapsulation technology.
We aim to transform agricultural by-products to address global challenges such as food shortages and waste disposal. To achieve the objectives, the following steps are undertaken:1. Characterization of Bioactive Compounds• Identify and analyze secondary metabolites present in agricultural waste using metabolomics approaches to determine their potential applications in food and health industries.2. Optimization of Extraction Techniques• Develop efficient and sustainable extraction methods to maximize the recovery of valuable secondary metabolites from agricultural byproducts for use in functional foods or nutraceuticals.3. Metabolic Profiling for Waste Valorization• Utilize metabolomics to compare and evaluate the biochemical composition of different agricultural waste sources, aiming to enhance their functional and nutritional value in food processing.4. Development of Innovative Food Ingredients• Investigate the incorporation of bioactive compounds derived from agricultural waste into food products to improve their nutritional and sensory properties while ensuring safety and stability.5. Sustainability and Circular Economy Implementation• Assess the feasibility of integrating agricultural waste-derived secondary metabolites into food processing industries, promoting a circular economy and reducing environmental impact.
