The Fermented Food & Beverage Innovation Research Group is dedicated to exploring the diverse world of food and beverage fermentation, a process that has been integral to human culture and nutrition for centuries. Fermentation can significantly impact the nutritional profiles and sensory qualities of foods and drinks through various mechanisms. The primary benefits of fermentation include the enhancement of functionality and the increase of the bioavailability of nutrients. Fermentation breaks down complex proteins into bioactive peptides, allowing for better digestibility and absorption in the human body. Microorganisms involved in food and beverage fermentation, such as lactic acid bacteria and yeasts, can synthesize vitamins, break down anti-nutritional factors, and produce bioactive compounds that contribute to overall health. The Fermented Food & Beverage Innovation research group focuses on several key areas that harness the potential of fermentation to enhance food and beverage production. One primary area is microbial biodiversity, where we explore the vast array of microorganisms involved in fermentation processes. This includes studying the functionalities of various bacterial and yeast strains to improve nutritional profiles, sensory qualities, and health benefits of fermented products. Therefore, our research group aims to identify and characterize these microorganisms to optimize fermentation techniques for a variety of food matrices and beverages. Our research group also focuses on the scientific investigation of fermentation techniques for food and beverage, the development of novel fermented products, and the enhancement of traditional foods and beverages through innovative approaches. Another significant focus of our research is on precision fermentation and its applications in developing novel food products. This includes innovations in strain development, feedstock optimization, and bioprocess design to create healthier and more sustainable alternatives to conventional foods. In order to achieve the forementioned goals, our research group is also committed to promoting collaboration between scientific communities and industry stakeholders which encourages a transdisciplinary approach to F&B fermentation research. By engaging with diverse participants—from scientists to consumers—the group aims to advance knowledge sharing and best practices in fermented food production to contribute to food security and sustainability. By leveraging interdisciplinary expertise in microbiology, food science, culinary arts, and food engineering, we aim to uncover new flavors, improve nutritional profiles, and promote sustainable practices in food production. Ultimately, our research will foster innovation in developing healthier and more flavorful foods and beverages that meet consumer demands.

To enhance the understanding, development, and application of fermentation technologies for production of high quality and healthy foods and beverages.

AIM

1.    Advance Scientific Knowledge: To conduct cutting-edge research that enhances the understanding of fermentation processes, microbial roles and interactions, and their impact on the nutritional and sensory qualities of fermented foods and beverages.

2.    Promote Sustainable Practices: To develop innovative fermentation techniques that optimize resource use, reduce waste, and support sustainable food production systems, contributing to global efforts in food safety and security.

3.    Foster Collaboration and Knowledge Sharing: To build strong partnerships with industry stakeholders, academic institutions, and local communities, facilitating knowledge exchange and collaborative projects that drive innovation in the field of fermented foods and drinks.

4.    Enhance Consumer Awareness and Health: To educate consumers about the health benefits of fermented foods and promote their inclusion in diets.
